Brazilian brigadeiro

What’s your favorite candy?

No respectable Brazilian birthday party—especially children’s parties—is complete without a generous serving of brigadeiros for the guests. This beloved candy is enjoyed across Brazil, from North to South and East to West. I grew up savoring brigadeiros at my own birthday parties. On those occasions, I would help roll them once they had cooled and then coat them in chocolate sprinkles. Of course, it was fun to help make them. Now I realize it was also a way of connecting with my cultural heritage. Even today, when we feel homesick, we make Brazilian brigadeiro at home for a taste of Brazil.

As you might have guessed, brigadeiro means “brigadier” in Portuguese. This sweet treat originated in the 1940s. It was named after Brigadeiro Eduardo Gomes, a Brazilian Air Force brigadier who ran for president. It was initially created as part of his campaign fundraising efforts and quickly became a national favorite.

About a month ago, I shared a recipe for one of my favorite snacks, Brazilian cheese bread. Now, I’m excited to share the recipe for brigadeiros below. I hope you’ll give it a try and experience this staple of Brazilian celebrations for yourself!

Classic Brazilian Brigadeiro Recipe

Ingredients

  • 1 can (14 oz / 395g) sweetened condensed milk
  • 2 tablespoons unsweetened cocoa powder
  • 1 tablespoon butter (plus extra for greasing hands)
  • 1/2 teaspoon vanilla extract (optional, for extra flavor)
  • Chocolate sprinkles (for coating)

Instructions

1. Cook the mixture

  • In a medium saucepan, combine the sweetened condensed milk, cocoa powder, and butter.
  • Cook over medium-low heat, stirring constantly with a wooden spoon or silicone spatula.
  • Stir continuously for 8-12 minutes. Stop when the mixture thickens and you can see the bottom of the pan. The mixture should slowly slide back, like thick caramel.

2. Cool the mixture

  • Remove from heat and stir in vanilla extract (if using).
  • Transfer the mixture to a greased plate or bowl and let it cool to room temperature.

3. Shape the brigadeiros

  • Grease your hands with a little butter.
  • Scoop small portions (about 1 teaspoon each) and roll them into smooth balls.

4. Coat with sprinkles

  • Roll each ball in chocolate sprinkles (or shredded coconut, crushed nuts, etc.).

5. Serve & enjoy!

  • Place them in mini cupcake liners for a neat presentation.
  • Store in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.

What is your favorite candy? Does it remind you of any special occasion? Why is it important to you? Leave that in the comments!
